type='text'>Cashew Butter Cookies

Didn't go to school today cause I wasn't feeling well... ): But thanks to the looooong sleep I had, I'm feeling tons better already(: I've been having the itch to bake these cashew butter cookies since goodness knows when and I finally did it!(: They turned out LOVELY...much to my delight(: Was super tempted to make oreo cheesecake actually BUT my sister finished up the oreo cookies at home AND i realized I didn't have enough cream cheese (and I bought whipped cream for no reason too) YUP! so cheesecake'll have to wait till...? :X

Oh ya, feedbacks for my pastachio hearts were really positive(: My mom said they tasted like Famous Amos (*cough* too big a compliment actually) and brought some to give one of the doctors for his birthday. He apparently enjoyed it very much and that in itself is a really really big encouragement for me(: Motivated, I decided to make these cookies today for my friends and family to enjoy! Yay!(:

Cashew Butter Cookies

Makes 16

Ingredients:

Dough:

3/4 cup cashew nuts

1/3 cup granulated (white) sugar

50g butter

1 egg yolk

1 tablespoon milk

1/4 teaspoon baking soda

1/4 teaspoon vanilla extract

1/2 cup all-purpose flour

Outer layer:

1 egg white, beaten

3/4 cup finely chopped cashews

1/8 cup granulated sugar

PS: 180g of Camel Salted Cashews Since he was such a dear and went all out to buy me the Granny Smith Apples (aka Green apples) and flour, I decided to take up the hint to make my own apple strudel for him to try(: This is nothing like the Ritz apple strudel which Singaporeans are familiar with. According to the recipes which I've found, this is supposed to be THE authentic apple strudel which originated in Australia. Oh wells...I'll see what my dad says(:

PS: Everything went fine until I rolled up the strudel. Must have been my generous serving of filling cause the pastry started to break apart to my dismay ): Anyway, to play safe, do the filling and rolling on the baking paper or tray itself to minimize chances of heart attacks :P

Apple Strudel (Aussie Style (:)

Makes erm. a HUGE strudel (Definitely for the HUNGRY)

Ingredients:

Dough:

2 cups all purpose flour

1 whole egg

1/4 cup (100g) butter

1 tablespoon white wine (or any other kinds of) vinegar

2-3 tablespoons lukewarm water (not all will be used)

1/4 teaspoon salt

Filling:

1kg Granny Smith Apples (around 10)

1/2 cup sugar

1/2 cup rasins

1/2 sweet crumbs*

1 orange (juice and rind) (around 6 tablespoons) (Original recipe said lemon heh)

1/2 teaspoon ground cinnamon

1/2 teaspoon rum (hope my Dad doesn't kill me for taking some!)

1/2 cup butter melted

*Sweet Crumbs:

(this is to absorb the extra moisture from the filling)

2 teaspoons sugar

1/2 cup toasted bread crumbs or biscuit crumbs (I used Lady's Fingers)

1/4 teaspoon ground cinnamon

Left over butter from spreading the dough

Glazing:

Half a cup of full cream milk

Preparation:

Mix flour, egg, vinegar and salt in a mixing bowl.

Add in lukewarm water tablespoon by tablespoon just until the dough is smooth but nt to soft.

Knead the dough for about 5mins (This can help train arm muscles :P)

Place the dough on an oiled plate and cover the surface of the dough as well. (I used the first)
3) When the pieces are about the size of small peas, blend in the shortening or margarine.
4) Stir in the water with a fork, a little at a time. Add more water if necessary to form the mixture into a ball. (Different flours absorb different amounts of water.) Wrap the dough in waxed paper and refridgerate for 20 minutes. (I wasn't too sure what the waxed paper was for and besides, I didn't have any so I just covered the bowl with a cloth.)
5) Roll out an fit into a 9-inch pie pan. (A little smaller is fine too.)
6) Cover the pastry with a piece of oiled foil oiled side down (so that it doesn't become hard), and bake in a preheated 375 F (approx. 190 C) oven for 10 minutes.
7) Remove foil.

CUSTARD

3/4 cup milk
3/4 cup heavy cream
2 tablespoons melted butter
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon nutmeg (I didn't have this as well as the cayenne pepper so I substituted with red pepper)
1 cup grated Swiss or Gruyere cheese (Replaced with Mozerella cheese, not a very good idea.)
1/2 pound bacon, fried until crisp and crumbled

The amazing thing about quiches is the number of combinations that can be used to flavour it. for this one I modified one of the alternative ingredients and used onions, green peppers and enoki mushrooms in plave of the bacon.

1) Stir together the first seven ingredients.

2) Sprinkle the cheese and bacon into the pie shell and pour in the custard slowly. (I would emphasize the word "slowly". Pouring it in too quick will diplace the ingredients in the pan so the they won't be evenly spread thoughout the quiche.)

3) Bake in a preheated 375 F oven for 40 minutes, until the custard in firm, puffy, and lightly browned.

4) Serve warm or cold.

Here's the stir-fry: onions, green peppers and enoki mushrooms.

And here's the pastry dough. Four of those with a slightly more voracious appetite will polish it off rather easily.)

Approx. preparation time: About 2+ hours in all, mistakes like forgetting to add water before putting dough in the fridge included *sheepish grin*

And so, the verdict:
I figure its not bad for a first attempt, especially when my sister's wanting more. But as always, there's room for improvement:

1) use the right cheese! well i thought i might as well finish off the mozerella in the fridge, and besides, theres this triple cheese version of the quiche which uses mozerella too.. so mozerella being mozerella it has this chewy sort of texture to it.. not exactly what i was looking for in a quiche..

2) the recipe read stir, the mixture (ie. cream, milk, eggs, etc.) so i stirred it.. and so there were these pieces of egg whites here and there.. i think light beating and a little more vigourous stirring of the mixture ought to do the trick haha.

3) the quiche was rising beautifully in the oven but when i took it out this middle kinda sank in a little.. i have no idea why this happened, could somebody tell me why?

oh, and what i liked was the taste of the pastry/crust thing.. i figure i might kope this part of the recipe for other stuff in the future.. oh yes, i nearly forgot.. i wrapped the alumium foil rather firmly around the pan, so the moisture was trapped inside.. so i guess, just laying the foil on top will do, so that the pastry won't get too wet.. and oh yes, and despite the cheese and all, the texture was squishy and quiche-ish.. yum!

Moist Chocolate Cake

I know many of my recipes involve chocolate and cocoa but you've got to admit that chocolates are everybody's favourites!(: and I seriously do love the smell it emits(: Got this recipe from the Cadbury website. While she got to try my baking during the holidays, Guan Qun and Zhao'en didn't so I decided to try my hands at baking muffins for them(: Rushed down to NTUC at Lot 1 to purchase my ingredients after PE that day and to my horror, they had no muffin tray!!! *grumbles* Anyway, I refused to let that get me and decided to make my own muffin cups using baking paper...and it worked! *beams* ((: Oh ya, for those of you who want to make your own muffin cups, the steps are easy...cut a square-ish piece of baking paper, line it in a cup or container to mould the shape and use a staple to fasten it in place (I've tried both scotch and masking tape and non of them works -_-) Pretty innovative, eh? ;)

PS: This recipe is modified to suit the taste of the SERIOUS CHOCOHOLICS due to the repeated emphasize by the girls to "put more chocolate chips" and make it more "chocolate-ty" lol.(: Perfect for the *ahem* time of the month. Heh. Definitely not for the weight or health conscious :P

Chocolate muffins (with extra chocolate)

Makes 8

Ingredients:

2 eggs

1 cup sugar

1 cup all-purpose flour

8 tablespoons unsweetened cocoa powder (Hershly's)

2 teaspoons baking powder

1 teaspoon vanilla essence

2/3 cup chocolate milk (ordinary milk will do just fine)

125g butter

1/2 cup chocolate chips (or more in my caseB)

50g baking chocolate, melted (Van Houten)

Preparation:

Preheat oven to 180 degrees C

Grease the muffin tray (if you fortunately have) or muffin cups (if you very cleverly made them :P)

Beat the eggs with sugar

Mix in the flour, cocoa powder, baking powder, vanilla essence and (chocolate) milk

Add in chocolate chips and melted baking chocolate (These will most likely end up at the bottom of the muffins)

My very "pretty" muffin cups lol.
